Having decided to make roti jala, literally "net bread" in Malay, for dinner, I was too lazy to make a curry, so it was off to Bamboe, our local Indonesian place, to pick up some curries to go with the roti jala.
The roti jala recipe was very similar to a crepe or pancake recipe. Using coconut milk gives it richness and fragrance. If a lighter pancake is desired, milk or unsweetened evaporated milk can be substituted.
We used a plastic cup with 7 holes made with a bamboo skewer. The trick is to find a right level to fill the cup such that the pressure causes the batter to squirt out evenly. Too much in a cup and the flow volume is too high. Too little, and the dribbles end up in a mess of dots in the pan. It is important to use a fluid motion fairly close to the pan, approximately 2 or 3 cm off the pan, to avoid the batter-stream breaking up into droplets.
